This coffee was grown by the Santa Isabelia cooperative in Matagalpa, Nicaragua. Farmers from Santa Isabelia have adopted “Marsellesa” trees, a new variety invented by the French research group known as ECOM-CIRAD, and now famous for its disease resistance (due to Catimor lineage), variable rainfall tolerance, and pronounced acidity in the cup.
